About Vasant Sambhar Masala
Vasant Sambhar Masala is a fine powder for making South Indian sambar at home. Whether you spell it sambhar or sambar, the dish depends on a good masala, and this blend of coriander, red chilli, fenugreek, cumin, cinnamon, hing and roasted rice gives the dal its body, colour and familiar aroma.
The rice in the blend helps thicken the sambar slightly, while methi and hing add the savoury, slightly bitter notes that set sambar apart from a regular dal. The result goes well with idli, dosa, medu vada and uttapam, and with plain steamed rice and papad for a simple lunch. Many families in Mumbai also make a quick sambar for Sunday breakfast.
Vasant's method is simple: cook toor dal with drumsticks, brinjal, pumpkin and onion, add tamarind paste, chilli powder, salt and a big spoon of sambar podi, then finish with a tadka of mustard, curry leaves and dry red chillies and boil for two minutes. You can also use the masala in vegetable kootu, sambar rice and masala idli. The 500g jar is handy for regular use, since sambar masala loses flavour quickly once exposed to air.
Available in 50g and 100g packs and a 500g jar. Masala365 is an authorised Vasant Masala distributor in Kandivali West, delivering across Mumbai, Navi Mumbai and Thane. For the rest of India, order through a WhatsApp inquiry.
