About Vasant Chaat Masala
Vasant Chaat Masala is the tangy, salty and slightly hot sprinkle that gives Indian street food its punch. Vasant Masala blends iodized salt and black salt with coriander, sour mango, kachri, mint leaves, dry ginger, cumin, chillies, black pepper, cloves, nutmeg and asafoetida.
The sour mango and kachri bring the tang, black salt adds its distinct sulphur note, mint keeps it fresh, and the chillies and pepper give a mild kick. It is the kind of masala that can rescue a plain dish in seconds. Vasant says its recipe went through many rounds of taste testing before it was finalised. A little sprinkle goes a long way, because the flavours are strong and the salt is already built in. It is one of those masalas that sits on the dining table as often as it sits in the kitchen, ready for a plate of fruit or a bowl of dahi.
Sprinkle it over samosas, sandwiches, salads, cut fruit, boiled corn and roasted makhana, or stir it into buttermilk and nimbu pani. For a quick aloo chaat, Vasant suggests boiling and cubing potatoes, mixing in mint paste, ginger, green chillies and salt, and finishing with a generous sprinkle of chaat masala. It also lifts boiled vegetables, sprouts and bhel.
