About Vasant Chhole Chana Masala (Chole Masala)
Vasant Chhole Chana Masala is a spice blend made for Punjabi chole, the chickpea curry that shows up at weddings, parties, street stalls and Sunday lunches alike. It gives the dish its dark colour, tang and warmth without you having to roast and grind a long list of spices.
The blend brings together coriander, chillies, sour mango, iodised salt, cumin, cardamom, fennel, mint leaves, fenugreek, star anise, cinnamon leaves and cinnamon, black salt, black pepper, nutmeg, cloves, big cardamom, dry ginger and mace. Dry mango and black salt give it a tangy edge, while cardamom, clove and nutmeg add depth. The flavour is spicy, sour and aromatic.
Vasant's own method: soak 100g chickpeas overnight and pressure cook until soft. Fry two finely chopped onions in 3 tablespoons of oil until golden, then add 1 teaspoon each of red chilli powder and coriander powder with 1 to 5 tablespoons of Vasant Chhole Chana Masala, depending on how strong you like it. Cook for three minutes on low flame, add tomatoes, ginger, green chillies and salt, then the chickpeas, and simmer for five minutes. Serve with bhature, puri, kulcha or jeera rice.

How to use
- Fry onions until golden, then add the masala with chilli and coriander powder
- Use 1 to 5 tablespoons per 100g dry chickpeas, to taste
- Cook on low flame before adding tomatoes and boiled chana
- Also try it in chana chaat, aloo chana or ragda
