About Vasant Kitchen King Masala
Vasant Kitchen King Masala is an all-purpose blend for sabjis and Punjabi-style curries. It brings together coriander, chillies, garlic, iodized salt, cumin, turmeric, curry leaves, cardamom, fenugreek, black pepper, fenugreek leaves, star anise, cinnamon, ginger, asafoetida, Bengal gram, caraway, cloves, nutmeg, mace and big cardamom in one pack.
The flavour is strong, savoury and well rounded, with warmth from the whole spices and a slight earthiness from the fenugreek and Bengal gram. It also gives dishes an appealing golden colour. Because it is intense, Vasant advises using it sparingly, and about a teaspoon is usually enough for a family-sized dish. It is handy for busy weeknights, for cooks who are still learning which spices go into which gravy, and for anyone who wants their paneer or veg curry to taste the same each time they make it. Pair it with fresh coriander at the end for a restaurant finish.
This is the masala to reach for when you want restaurant-style food without laying out ten different spices. It works in paneer tikka, paneer do pyaza, mix veg, aloo gobi, bhindi masala, dum aloo and rajma. Add it to the onion-tomato base once the oil separates, and let it cook for a couple of minutes so the raw taste goes away.
