About Vasant Lakhnavi Fennel Seeds (Lakhnavi Saunf)
Vasant Lakhnavi Fennel Seeds are the finer style of saunf that many families prefer for chewing after meals and for delicate cooking. Lakhnavi saunf takes its name from Lucknow and is known for slim seeds with a sweet, fresh taste and a fresh anise-like smell. This listing is a 500g pack from Vasant Masala.
In Gujarati homes these seeds are called Lakhnavi variyali, and a small bowl of variyali mixed with dhana dal or sugar coated saunf often sits by the door after dinner. Plain saunf is also roasted lightly with a little salt and lemon to make homemade mukhwas. Many families keep a separate jar just for after-meal saunf, apart from the one used in cooking.
In the kitchen, fennel seeds go into the tadka for kadhi, dum aloo and some fish curries, and into the spice mix for mango and lime pickles. Crushed saunf adds sweetness to gulkand paan, thandai and kheer, and a spoon boiled in water makes a mild saunf sharbat base in summer. A 500g pack is enough for mukhwas making and regular cooking for quite a while.
