About Vasant Sesame Seeds (Til)

Vasant Sesame Seeds are small, oil-rich seeds with a delicate nutty taste and a light crunch. Known as til in Hindi and tal in Gujarati, they are one of the oldest seeds used in Indian cooking and show up in both sweet and savoury food. A little goes a long way, since the flavour grows stronger when the seeds are roasted.

Their best known season is winter. For Makar Sankranti, homes across Maharashtra and Gujarat make til gul ladoo and chikki with jaggery, and in Marathi they are often called tila. Odia and Bengali kitchens use tila or tala in pithas and sweets, while in Tamil Nadu and Karnataka the seeds are called ellu and go into ellu podi and ellu urundai.

In everyday cooking a spoon of sesame seeds in the tadka lifts dhokla, khandvi, handvo and muthia. They are sprinkled on naan, bhakri and batter for pakodas, ground into chutneys with peanuts or coconut, and toasted over salads and stir fried vegetables. Lightly roasting them in a dry pan for a minute brings out much more flavour. Some families also like a spoon of roasted til with jaggery after a meal in winter.
