About Vasant Shahi Paneer Masala
Vasant Shahi Paneer Masala is made for one of the most loved dishes on any Indian restaurant menu. Shahi paneer traces its roots to Mughal royal kitchens, where rich gravies were built on nuts, cream or curd and warm spices, and this blend lets you cook that style of dish at home without a long list of separate spices.
The masala combines coriander, chilli, cassia leaves, clove leaves, garlic, black pepper, dry ginger, dry mango, tomato powder, salt, turmeric, fennel seeds, fenugreek, clove, star anise, big cardamom, cardamom, nutmeg and malic acid. Together they give a smooth, gently spiced and slightly tangy flavour that suits a creamy gravy rather than a fiery one. If you like a slightly sweeter gravy, add a spoon of cashew paste or a pinch of sugar along with the masala. The blend is meant to support the cream and paneer, not hide them.
Vasant's suggested method is simple: add a tablespoon of the masala along with your other spices to matar paneer, mixed vegetables or a similar dish, pour in a little water and let it cook for a while. Garnish with green coriander and a dash of fresh cream, and serve hot with naan, roti or jeera rice.

How to use
- Add a tablespoon of masala to your onion, tomato or cashew base
- Add paneer and a little water, then simmer for a few minutes
- Use for matar paneer and mixed vegetable gravies as well
- Garnish with coriander leaves and fresh cream
- Taste before salting, as the masala already contains salt
