About Vasant Tea Masala (Chai Masala)
Vasant Tea Masala is the spice mix that turns an ordinary cup of tea into proper masala chai. Vasant Masala blends ginger, black pepper, nutmeg, cinnamon, mace, cardamom and cloves, the warm whole spices most families would otherwise crush by hand every morning.
The ginger and pepper give the chai a gentle bite, cardamom and cinnamon bring sweetness and fragrance, and nutmeg, mace and cloves add depth. The result is a kadak, aromatic cup that tastes the same every time. In Maharashtra it is chaha masala, in Gujarat cha masala, and across most of India it is simply chai masala. Using a ready blend saves the daily work of pounding elaichi and adrak, which is handy on busy mornings or when a large group of guests arrives. The mix is fine enough to dissolve into the tea, so there is no gritty layer left at the bottom of the cup or on the strainer.
Vasant recommends adding the masala to the tea before it boils so the spices have time to open up. A pinch lifts plain everyday tea, and it also works in coffee for a spiced twist. Some families stir a little into warm milk at night, and it can go into kheer, shira or cake batter for a chai-spiced flavour.
