About Vasant Veg Biryani Pulav Masala (Pulao Masala)
Vasant Veg Biryani Pulav Masala is a single blend that works for two favourite rice dishes, veg biryani and veg pulao. Instead of collecting and grinding whole spices before you start, you add one masala and get a fragrant, well seasoned pot of rice.
The blend is made with dry ginger, bay leaf, peas gram, coconut, chilli, dry mango, black pepper, cumin, sugar, coriander, cinnamon, mace, clove, nutmeg and caraway. Mace, nutmeg and clove give it the rich aroma people expect from biryani, while coconut, dry mango and a little sugar round out the taste so it is not just hot.
Add about one and a half teaspoons of the masala along with your other spices. You do not need garam masala or kitchen king when you use this blend. For biryani, add a tej patta and the masala to the vegetable gravy before layering with basmati rice. For pulao, add it while sauteing the vegetables. Whole spices like cloves or cinnamon are optional if you enjoy biting into them. The pack has more directions. Let the rice rest covered for a few minutes after cooking so the aroma of the masala settles through every grain.
