About Vasant Ajwain Seeds (Carom Seeds)
Vasant sells ajwain under the name Caraway Whole, and on this page you will find it as Vasant Ajwain Seeds or carom seeds. These are the small, ridged, greyish brown seeds of the Trachyspermum ammi plant, a staple in North Indian and Gujarati cooking. Vasant sources them from growing areas across India and packs them whole.
Ajwain has a strong, sharp aroma close to thyme, with a pungent and slightly bitter bite. That intensity is the reason recipes call for so little. Crushed lightly between your palms before use, the seeds release even more fragrance. In Gujarati it is called ajmo or jwano, in Tamil omum, and in some shops it is labelled ajowan or thymol seeds.
Add a pinch to the dough for aloo paratha, methi thepla, mathri, puri and kulcha. Stir it into besan batter for pakoras and bhajiyas, or into fish and prawn masala before frying. In tadka, ajwain works well with dal, kadhi and root vegetable sabzis like arbi and suran. A little also suits namak pare and khakhra dough. Toasting the seeds in a dry pan for a few seconds before use brings out a deeper, rounder aroma.
