About Vasant Strong Hing (Asafoetida Powder)

Vasant Strong Hing is a compounded asafoetida powder made with imported hing, wheat flour and edible gum. Vasant Masala says the hing is processed under strict quality control so that the powder stays strong, and that matters with hing: a weak one forces you to add spoonfuls and still never gives the real flavour. The 500g jar suits restaurants and large households.

Asafoetida comes from the dried resin of the ferula plant, which grows in Afghanistan and nearby regions, yet it is Indian kitchens that use it the most. On its own it smells sharp and pungent, but once it hits hot ghee or oil it mellows into a savoury taste close to onion and garlic. It is known as heeng in Hindi, hingu in Kannada and inguva in Telugu.

A small pinch in the tadka is all you need for dal, kadhi, sambar, rasam, chole and most sabjis. It is especially useful in Jain cooking and other kitchens that skip onion and garlic, and in pickles, dhokla, khandvi and farsan batters. Since this blend contains about 70% wheat flour, it is not suitable for anyone who avoids wheat or gluten.

How to use

  • Add a small pinch to hot ghee or oil along with jeera or rai
  • Use in the tadka for dal, kadhi, sambar and rasam
  • Add to dhokla, khandvi and farsan batters
  • Use in pickles and in onion-free, garlic-free cooking
  • Close the lid tightly straight after use, as the smell is strong
