About Vasant Rajwadi Garam Masala
Vasant Rajwadi Garam Masala is a rich blend made from a long list of whole spices, including coriander, chilli, cumin, cinnamon, cloves, black pepper, both green and big cardamom, mace, nutmeg, star anise, dry ginger and stone flower. Rajwadi means royal, and the masala has the full, warm character that name suggests.
Unlike a plain garam masala, this rajwadi masala also carries chilli and salt, so it brings heat and a rounded taste to a dish rather than only fragrance. It is a favourite in Gujarati cooking, where it goes into undhiyu, methi muthia, patra, usal and kathol. It works just as well in samosa and pattice filling, bhakharwadi, vegetable curries and biryani.
Vasant's own guide is about one and a half spoons for 500g of vegetables or one litre of dal, stirred in and cooked for two to three minutes on low flame. For undhiyu, add it along with the other spices while sauteing the boiled vegetables, and mix some into the methi dough for the muthia. A light sprinkle over curd or a finished sabzi also adds a nice lift.
It comes in 50g and 100g packs, and in 200g and 500g jars. Masala365 is an authorised Vasant Masala distributor in Kandivali West, and we deliver across Mumbai, Navi Mumbai and Thane. Orders from elsewhere in India are handled on WhatsApp inquiry.
