About Vasant Rajasthani Achar Masala (Royal Achar Masala)

Vasant Rajasthani Achar Masala, which Vasant also sells as Royal Achar Masala, is a spice mix for making pickle at home with very little effort. The blend is built on fenugreek, mustard, hing, chilli and turmeric, the spices that give a good achar its colour, smell and bite. It saves you from buying, cleaning and grinding each spice separately before pickle season.

It goes beyond the usual mango pickle. Vasant recommends it for carrot, gunda, green chilli, tinda, kerda and even grape achar, which makes it handy for families who pickle whatever is in season. In Maharashtra a blend like this is called athana masala, while Tamil kitchens would ask for urukai podi.

The same pickle masala works as a daily taste maker. Stir a little into toor dal or khichdi, sprinkle it on khakhra or bread pakoda, or serve it alongside dahi parathas and khichu. How to use

  • Cut and fully dry carrots, gunda, chillies or kerda, then coat with the masala and add oil.
