About Vasant Mustard Seeds (Rai)

Vasant Mustard Seeds are small, round black mustard seeds, known as rai in most Indian kitchens, mohari in Marathi and avalu in Telugu. Vasant sources them from mustard growing areas of Gujarat and packs them in a 500g size that suits homes where tadka happens at almost every meal.

These seeds carry a good amount of natural mustard oil, which gives them a strong, sharp flavour. Vasant checks each batch before it goes on to cleaning and processing, so the seeds you get are fresh and free of husk and grit. When they hit hot oil, they crackle and pop within seconds and release a nutty, pungent aroma that is the base of countless Indian dishes.

Start a tadka with rai for dal, kadhi, sambar, poha, upma and lemon rice. It is essential for Gujarati dhokla, khandvi and handvo, for Maharashtrian pohe and sabudana style dishes, and for South Indian coconut chutney. Crushed or split mustard seeds are also used in mango, lime and carrot pickles. Wait for the seeds to splutter fully before adding the next ingredient, or they can taste bitter. Keep the flame at medium so the oil is hot enough to pop the seeds without burning them.
