About Vasant Natural Black Pepper Powder (Kali Mirch Powder)

Vasant Natural Black Pepper Powder is ground kali mirch, made from the dried unripe berries of the pepper vine. Black pepper is often called the king of spices, and Vasant Masala describes its powder as quite strong in flavour, so a small amount goes a long way.

The taste is sharp and pungent with a mild heat that builds slowly, very different from the direct burn of chilli. Freshly opened, the powder has a woody, slightly citrusy smell. In Hindi it is kali mirch, in Marathi kali miri, and in Gujarati kitchens you will often hear it called mari. Ground pepper blends into food more evenly than whole peppercorns, so there are no sudden hot bites, and it is easy to control. A 50g or 100g pack is a sensible size, because pepper is used in small amounts and lasts a while in most kitchens.

Vasant suggests sprinkling the powder over salads or stirring it into stews, and it is just as good on buttered corn, omelettes, sandwiches, soups and pasta. In Indian cooking it is used in rasam, pepper chicken, pongal, raita, chaas and many garam masala style blends. Add it towards the end of cooking if you want the aroma to stay sharp.
