About Vasant Natural Dry Ginger Powder (Sonth Powder)
Vasant Natural Dry Ginger Powder, known in most Indian homes as sonth or soonth powder, is made by drying ginger root and grinding it fine. The result is an off-white to light brown powder with a strong, pungent smell and a sharp warmth that is quite different from fresh ginger.
Because the water is gone, dry ginger has a more concentrated, slightly earthy bite. A small pinch is enough to be noticed. It is called shunthi in Marathi, sukku podi or chukku podi in the south, and many people simply ask for adrak powder when fresh ginger is not at hand. The powder mixes easily into liquids and dry blends, which makes it more convenient than grating fresh ginger when you are making a large pot of chai for guests, a batch of spice mix, or a marinade that needs an even coating.
In Indian cooking sonth powder goes into masalas for gravies, curries and tandoori marinades, and it is a common addition to ginger tea and masala chai.
