About Vasant Dry Mango Powder (Amchur Powder)

Vasant Dry Mango Powder, better known as amchur powder, is made by drying unripe green mangoes and grinding them into a fine powder. It gives food a sour, lightly sweet tang that sits somewhere between lemon juice and tamarind, without adding any liquid to the dish. It is a pantry staple in north Indian and Gujarati kitchens alike.

That dryness is what makes aamchoor powder so useful. You can sprinkle it on bhindi fry, aloo sabzi or chana without making them soggy, and it gives chaat, samosa filling and pani puri water a sharp, fresh edge. Marathi homes may call it amba powder, and in the south it is sold as mangai powder or aamchur podi.

Amchur needs very little cooking, so it is usually added towards the end, once the flame is low or switched off. It is a regular in chutneys, pakoda batter, stuffed parathas, tandoori marinades and chole masala, and a pinch in fruit chaat or roasted makhana works well too.
